Nutrition Counseling can provide invaluable support for health needs and goals. Working with a dietitian with knowledge of evidence-based health practices and enthusiasm for delicious, healthy cooking is a wonderful benefit available to employees enrolled in ÄÌÌÇÖ±²¥â€™s health benefits plan.

  • Six free visits every year (June 1 - May 31)
  • Telehealth sessions available via Microsoft Teams

Katie is a proud VU alum with a passion for health and wellness. She is dedicated to tailoring nutrition plans that fit seamlessly into your lifestyle. Her areas of expertise include weight management, preconception and prenatal nutrition, nutrition for hormone balance, mitigating insulin resistance, and PCOS. She has many years of experience in the fitness industry as a yoga and barre instructor, and alongside optimal nutrition, encourages movement as an integral lifestyle modification in achieving positive health outcomes.

Ashley Mayes, MS, RD, LDN, CDCES
Employee Wellness Dietitian, MacDonald Center for Nutrition Education and Research

Ashley is a registered dietitian and Certified Diabetes Education Specialist with over eight years of experience in the field. She earned her B.S. in Nutritional Sciences from Penn State University and her M.S. in Nutrition (Dietetics) from Arizona State University. She started her dietetics career as a clinical dietitian, and for the past five years she has been doing one-on-one nutrition counseling. Outside of work, she loves to spend time with her husband and one-year-old son. Her other interests include yoga, spending time at the beach, cooking, and live music.
